The project aims to better understand the alcohol market, from the point of view of local actors in charge of**individual consumption sales. The research will be performed in collaboration with WISK Solutions, a**Montreal-based company making beverage analytics software for restaurants, bars and hotels and proposing**tools to improve bar management, monitoring the sales, the inventorying and the stock replenishment. We aim**to model demand and extract patterns from sale records, taking account of seasonality and geographical effects.**The demand analysis will be used to develop an inventory management model that could be used to give**practical advice to the clients about the time and the volume of the order to pass in order to maintain a stock**level compatible with the demand, and ultimately improving the achieved revenue while enhancing consumer**satisfaction and reducing waste and losses.
