Developing high quality 3D printed foods

This project will explore the use of a 3D printer to print customized foods at a low cost, while still ensuring that the food is of high quality and is safe to consume. This project will first investigate sanitizing strategies to be employed by the user when printing food products. Food grade materials that can be used in the print cartridges of the printer will be identified and strategies for sanitizing the materials after use will be examined. This step will be validated through microbiological testing of the printing material before and after sanitation. The textural quality of the printed material will also be examined. Three food matrices (a lipid based, a protein based, and a carbohydrate based matrix) will be optimized for printing. The printed products will be tested with sensory evaluation using projective mapping and ultra-flash profiling to further optimize products for textural characteristics.******
