この30年間に食肉流通産業は大きな展開をみたが,そのうち次の2点が特に重要であった。(1)食肉(牛肉と豚肉)の流通形態の変遷を見ると大きく三つの時期区分ができる。第一期は生体流通が主流であった時期,第二期は生体流通が枝肉流通に取って代わられる時期,第三期は流通量の半分以上が部分肉流通となる時期である。流通形態を変化させる最大の要因は川下に位置する販売業者の構造変化である。その結果,解体・加工・成型するという機能が当初は小売業者に属していたのだが,現在では屠殺業者まで移動してしまった。この機能の移動は産業構造の変化を誘引したが,そこで重要な役割を果たしたのは,政府・食肉加工メーター・系統農協であった。なおこのような変化の画期は牛と豚で異なる。このような差をもたらしたのは,牛豚の生産形態と違いと個体均質性の格差である。(2)食肉の輸入自由化は,近年の畜産・食肉産業の構造を規定する最も重要なファクターの一つである。特に牛肉輸入自由化は,和牛とそれ以外の牛の間の肉質の差別化を促進させ,それを契機にしてスーパーを核に小売段階の一層の構造変化をもたらした。また豚肉の輸入制度が食肉加工メーカーの構造に与えた影響は大きいことが明らかになった。実態調査は,農林水産省,食肉加工メーカー,食肉センター,経済連,食肉卸売市場,部分肉センター,家畜市場,農家などの多方面にわたった。それぞれ流通形態の変遷を明らかにし,そこにおける競争の実態と市場成果を検討した。特に集荷における食肉センター,農協,食肉加工メーカーの競争行動は,集荷段階の市場成果に重大な影響を与えることが明らかにされた。この競争の実態は集荷業者-農家間の取引形態の多様性をもたらしたが,これについては産業組織論や取引費用論の理論的フレームワークで考察を試み,既存の畜産インテグレーションに新たな視座を付け加えた。
