项目摘要

「食」を営む力を育むためには、乳幼児期から、発育・発達段階に応じた豊かな食の体験を積み重ねていくことが大切である。また、乳幼児期の食行動発達における母親の役割は大きく、母親の食事介助や食に注意を向ける行動は子どもの食行動発達に関連している。本研究では、前年度からの観察調査および質問紙調査において離乳期における食行動と、幼児期の食行動の特徴を比較検討し、離乳期のかかわりによる関連を調べた。方法は、母子10組を対象に、離乳期は自食が可能となってくる14カ月齢に家庭訪問にて母子での食事場面をビデオカメラで撮影し、観察終了後に質問紙調査を実施した。幼児期は、食行動が概ね形成されると言われている3歳齢に郵送法にて質問紙調査を実施した。行動分析は、対象児が食物を口に入れた瞬間から終了するまでの子どもの各行動を記録し、その行動の食事時間中に占める割合を食行動の発達指標としてそれぞれ「自食率」「受容率」「口への取り込み能力」「咀嚼能力」と定義した。質問紙では、母親が子どもの食事で「困っていること」「心がかけていること」「楽しみ」等についてそれぞれ評定してもらった。その結果、離乳期に自食率が低かった子どもの母親は、幼児期において「飲み込まない」、また受容率の低かった子どもの母親は、「肉や食べにくいものを食べない」「遊び食べ」を問題と感じていた。全体的に幼児期の方が、食事への配慮や食事中の楽しみが減っている母親が多かった。今回の結果より、離乳期に食に対して何らかの問題を抱えていた母子の場合、幼児期の食行動にも食に対する何らかの問題を抱えていることが多いことが明らかとなった。これには、食行動の発達だけでなく母親の関わりかけや、子どもの情緒や社会性等の精神面での発達も大きく影響していると考えられる。今後は、幼児期における食行動の行動観察も取り入れ、さらに詳細に検討していくことが課題である。
