児童に生きる力を発揮させ、健康管理能力を高める事を目的に、望ましい食習慣と規則正しい排便習慣の形成のための日本型薬膳食育プログラムを開発し評価した。食と健康の意識・実態調査と学校給食にヘルシーメニューを導入することで知識は向上した。さらに、食育CD-ROM、解説書・カレンダーを作成して3ヵ月間、児童に配布し評価すると効果は認められた。これらの教材は学校現場の食育で利用価値が高まると考えられる。
