Ocean Nutrition Canada (ONC) is a NS based company and is one of the largest companies producing fish oil derived Omega-3 fatty acids (eicosapentaenoic acid, EPA, and docosahexaenoic acid, DHA), with established dietary supplement and health food markets. EPA and DHA are inherently unstable oils even at ambient temperature, rapidly forming oxidation products with undesirable flavor and odor. Preparation of the oil for consumption typically involves microencapsulation of Omega-3 oil in order to alleviate the undesirable fishy flavor and to prevent oil oxidation.
