La consommation des champignons suscite un intérêt grandissant au grand public cette dernière décennie car
ils sont des aliments très nutritifs et pauvre en calorie et constituent une bonne source de minéraux, de
vitamines et de protéines. Il existe trois possibilités pour s'en procurer: l'achat dans le commerce de détail, la
cueillette dans les forêt et les pâturages, et la culture chez soit à la maison. Les champignons frais disponibles
dans le commerce proviennent en grande majorité de la culture industrielle dans des champignonnières tels
que le champignon de Paris, les pleurotes, le shii-také, les flammulines, etc. D'autres champignons proviennent
de la cueillette sont aussi disponibles selon la saison tels que les chanterelles, des bolets, des cèpes, etc.
Cependant, on peut trouvé des champignons d'importation vendus séchés ou mis en conserve.
Plusieurs espèces de champignons saprotrophes (c'est à dire capables de décomposé la matière organique)
peuvent être cultivés en grande quantité facilement en utilisant plusieurs méthodes. Par contre, d'autres
champignons ont adopté un mode de vie différent en s'associent avec des racines des plantes pour former des
mycorhizes. La culture de ces derniers représente un défi considérable selon les espèces. Plusieurs recherches
ont tenté de cultiver la morille, l'un des champignons les plus convoités en gastronomie. Des brevets ont été
déposés à travers le monde pour la production commerciale de l'espèce Morchella rufobrunnea. L'objectif de
cette proposition est de tenter développer une approche expérimentale de cultiver et, éventuellement, de
produire la morille au Québec. Un deuxième objectif serait de mettre en place une procédure de production de
sacs de cultures de champignons (e.g. trametes ou pleurotes) faciles à utiliser à la maison et en jardin. Sans
viser la fructification, les substrats ensemencés seront testés en culture dans les serres grâce à la capacité de
production du CO2 qui favorise la croissance des plantes.
