Lallemand Inc. is a Canadian company, founded at the end of the 19th century, in Montréal. Lallemand biofuels
and distilled spirits (LBDS) provides yeast and bacteria worldwide for diverse applications. Their expertise is
in ethanol production using various strains of yeast, whether it be for biofuels or for spirits. The proposed
project consists in obtaining better understanding of the influence of fermentation parameters on congener
profiles and in determining variability in congener profiles for various yeasts. Congeners are molecules that are
produced by yeast during fermentation and which can contribute to the flavor profile of the final spirit. LBDS
would like to gather this data in order to compare with organoleptic properties and eventually to better
recommend their products to clients in the distilled spirits industry.
