Founded in 1874, Wyman's is a family owned company that grows, processes and markets wild blueberries and other fresh and frozen fruit. Wyman's has developed state of the art processes for fresh freezing, to maintain the high quality flavour and nutritional benefits. In the late 90s, Wyman's began to expand their capacity into value added products Wyman's has conducted significant market research internally and determined there is significant opportunity in instant smoothies, premade smoothies and value added wild blueberry beverages. Wyman's is seeking support from Canada's Smartest Kitchen (CSK) to help lead the development of new beverage products. Located in Charlottetown, PEI, CSK's multidisciplinary team combines culinary creativity, food science, and market insight to help companies develop innovative new food products. CSK is a NSERC Technology Access Center and promotes an innovation culture within Holland College by supporting Culinary Institute of Canada student's participation in industry led research projects. Wyman's will work alongside CSK to develop three concept prototypes at a bench top scale. Technical challenges in shelf life and packaging will be investigated to ensure products maintain quality and freshness.
