Homogenization and high shear mixing tests for cream-based liqueur development

Coldstream Clear Distillery (CCD), Nova Scotia's first craft distillery, opened in September 2015 and produces high quality, hand crafted spirits and liqueurs. Based out of Stewiacke, Nova Scotia, CCD produced and sells 11 different products out of their storefront retail shop and at 35 Nova Scotia liquor stores across the province. CCD has experienced significant growth based on the expansion of their popular liqueur collection including salted caramel, classic coffee and crazy for coconut flavours. Canada's Smartest Kitchen is in Charlottetown, PEI, and has a multidisciplinary team of creative culinary and market insight experts and food scientists to help companies develop innovative new food products. CSK is a NSERC Technology Access Center and promotes an innovation culture within Holland College by supporting Culinary Institute of Canada student's participation in industry led research projects. CCD is exploring a further expansion of the liqueur collection by developing cream-based liqueurs and has approached CSK to help develop these prototypes while utilizing CSK's new two-phased homogenization system recently acquired through an Applied Research Tools and Instruments grant recently.
