Technical Scale Up of Pepper Jellies from Batch to Full Production

For over 25 years, Galloping Cows Fine Foods (GC) has been producing all-natural pepper spreads, servicing both the retail and food service markets. GC has recently been approached by major airlines and hotel chains to start producing their products in convenient single serve packages. To meet this demand, GC will require improvement of their current manufacturing processes and procedures, significant scale up of their current formulation, as well as support in identifying new innovative packaging that will preserve the product while providing functionality and convenience. GC hopes to collaborate with Canada's Smartest Kitchen at Holland College, the food product research and development arm of The Culinary Institute of Canada to solve the technical challenges associated with scaling up the pepper spread formulations and identifying appropriate packaging to meet the requirements of these new markets.
