As alternative nut-based spreads grow in popularity and market share due to allergies related to peanut butter,companies look to innovate and develop commercial products to capture that growth. New innovations arebeing sought in how new spreads are blended, different nutritional profiles, unique flavour combinations andnew health claims. Sunrise Foods (Sunrise), based in Dartmouth, Nova Scotia, is a snack food companycurrently producing cracker and cheese spread and breadstick and cheese spread snacks that are sold acrossCanada that are ideal for K-12 school lunches. Sunrise recognized early in their company's history, the need togrow their product line and diversify according to new markets. Sunrise has been working on the developmentof hazelnut spreads for several years but lack the internal capacity to solve technical challenges associated withfood product development and scale up. Sunrise has approached Holland College and Canada's SmartestKitchen (CSK), the food product R&D arm of the Culinary Institute of Canada to collaborate on thedevelopment of new, innovative nut and seed spreads that will meet the growing demand of allergen freeconsumers.
