Canada's Smartest Kitchen (CSK), the research and development arm of the Culinary Institute of Canada (CIC) at Holland College (HC) takes a multidisciplinary approach to solving industry-based food and beverage innovation challenges. Utilizing expertise in food science and culinary creativity combined with a market driven approach, CSK is proposing to work with Island Gold Honey (IGH), a local producer of high quality honey, to develop new, novel honey products that can be utilized both in the confectionary sector and in the cannabis edibles industry. This project will study the different processing outcomes by conducting various battery tests on the unique IGH honey product to determine how it reacts under temperature, freezing, drying and other processing conditions. The information gathered from these processing tests along with market analysis, will be used to support product ideation and the development of unique new honey products. New honey "edible" prototypes will be developed by using surrogate oils to mimic the inclusion of tetrahydrocannabinol (THC) and cannabidiol (CBD) until CSK can secure their Cannabis License from Health Canada.
