Re-formulation of Soup Bases Using Naturally Sourced Ingredients

Designed Ventures Inc. (DV Inc.) currently produces nine soup base stock mixes under the brand "Falavory" in Lower Brighton, New Brunswick. DV Inc. is seeking help from Canada's Smartest Kitchen, a NSERC Technology Access Center at Holland College, to re-formulate those nine soup bases using natural sources of ingredients to replace artificial flavours and anti-caking agents. CSK researchers will 1. research new innovative naturally derived ingredients and 2. investigate the effects of replacing artificial ingredients with naturally sourced ingredients on the overall organoleptic properties and compare to the originals to minimize quality, taste and texture changes. CSK will perform a series of battery tests to ensure re-formulations are shelf stable and can be scaled up to meet consumer demand.
