A Study on "Quality of Eating" from the View of the Point of Contacting "Recovery of Culture of Eating Habits" with "Green Purchasing" of Food - Examination of the Evaluating Method for a Goal of Qualitative Improvement of Home Eating Habits -

本研究的目的是通过对学校午餐服务方法的修正，从“饮食质量”、“饮食习惯文化的恢复”和“绿色购买”的相关性角度，把握日常饮食的真实状态。对家庭饮食习惯进行了调查。试着在3个分数线上以100分为基础进行评分。对“饮食质量”的评价主要从六类食物的充分性、米饭的出现次数、每餐的菜数、酱油的用料等方面进行。关于“饮食习惯文化的恢复”的一项是关于日式料理的数量、味噌的出现、防腐食品和年菜的手工制品的数量等。一项关于“绿色购买”的研究涉及食品的储存、洗涤剂的类型等项目。

The purpose of this research was to grasp the real state of everyday diet from the standpoint of relevancy between "quality of eating", "recovery of culture of eating habits" and "green purchasing ", through modified the approach taken toward school lunch service.An Investigation concerning the home eating habits was made. It was tried to evaluate by marking on the basis of 100 points from the three standpoints. The estimation concerned with "quality of eating" was done with the items such as sufficiency of six food group, times of appearance of cooked rice, number of dishes of each meal, materials of soy sauce, and so on. One concerned with "recovery of culture of eating habits" was done with the items such as number of Japanese-style dishes, appearance of MISO, number of handmade goods of preservative foods and New Year's dishes, and so on. One concerned with "green purchasing" was done with the items such as the store of foods, the type of detergency, and so on.
