ブラジル在住日系人のヘテロサイクリックアミン摂取量を把握するための質問票を開発し、加熱食品中のヘテロサイクリックアミン含有量データベースを作成するために、ブラジルでよく用いられる調理法を用いて肉・魚類を調理しヘテロサイクリックアミンの分析を行った。その結果、食材、調理法、焼き具合(3-4 段階)、マリネの有無、皮の有無などの条件別のデータベースが整備され、質問票により摂取量推定が可能となった。
