本研究では、個人の感性の違いが顕現しやすい食品の特性として「濃厚感」に焦点を当て、様々な品質評価に応用が可能な、知覚の個人差を考慮した官能評価プロセスの提示を目的とする。2021年度は、本研究で試料として用いる食品の選定を行った。濃厚感がおいしさに与える影響が大きいと考えられる種々の食品に関する文献調査と、試食による予備評価を実施した。その結果、様々な強度の濃厚感を呈し、性状をコントロールしやすく、濃厚感の知覚における個人差が大きいと考えられる試料食品として、市販インスタントスープが選定された。次に、市販インスタントスープを官能評価に供する際の試料調製条件や試料提示方法について検討・決定した。続いて、15種の市販インスタントスープについて7名の分析型パネリストによる官能評価を実施し、濃厚感の強度評価と、濃厚感の評価に影響した要因の言葉出しによる抽出を行った。その結果、スープが呈する濃厚感の強さと関連しうる要因として、味や風味の強さ、味や風味の持続性、油脂、粘度、舌ざわり等が抽出された。また、これらの要因が濃厚感の知覚に及ぼす影響の程度は人によって異なることが明らかとなった。さらに、15種の市販インスタントスープについて塩分濃度および粘度を測定した。その結果、塩分濃度や粘度は知覚される濃厚感の強さと必ずしも相関せず、濃厚感は複数の要因が複雑に影響して知覚されるものであることが推測された。研究者の産前・産後休暇および育児休業の取得に伴い、2022年6月より研究を一時中断した。2023年4月より研究を再開する予定である。
