Pie Eyed Monk is a locally-owned and operated brewpub located in Lindsay, Ontario, consisting of a restaurant and a seven-barrel brew house that produces seven hand-crafted beers. Like all brewing facilities, its operations generate wastewater with elevated concentrations of particular regulated substances-a by-product of brewing with protein and carbohydrates. Currently, the business manages their wastewater using an advanced membrane filtration treatment system that has been adapted to meet the specialized needs of a brewery environment. During periods of intensive brewing, excessive foaming has occurred throughout the system resulting in approximately 5-10% of the wort (which is converted to beer) lost to drains. This requires time-consuming remedial action and constitutes a major operational inefficiency. The purpose of this project is to collaborate with Fleming College's Centre for Advancement of Water and Wastewater Technologies (CAWT) on the development of a modified wastewater treatment system that will engineer a solution to address foaming. The project will result in a modified, low-maintenance, fully compliant wastewater treatment system that will allow Pie Eyed Monk to remain buoyant within a thriving but competitive market.
