Quebec is the leader in maple syrup production with an average of 72% of the world maple syrup production over the last 30 years. This product is exported to more than 53 countries where 80% of its production is sold. The maple syrup industry had a 29% increase in exports and a 75% increase in sales over the last five years, and a record production in 2017 of 152.2 million pounds of maple syrup. With the emerging technologies in maple syrup production and climate change, we have been witnessing for some years now, an increase in volumes of maple syrup produced with off-flavors that considerably affect its economic value. In addition, the maple industry generates high amounts of maple sand, a by-product that is still not exploited but shares high nutritional components of maple syrup. Therefore there is an urgent need among producers of maple syrup for the development of new avenues allowing the valorization of these by-products whose nutritional value remains very interesting. In this project, we propose to develop a large scale process for the production of food supplements based on maple by-products intended for animal nutrition. This project also aims to evaluate the impact of these supplements on the modulation of the intestinal microbiota in pigs while controlling the undesirable enteric flora. The specific objectives of this project are: Objective 1. To characterize various maple by-products at physicochemical and microbiological levels; Objective 2. Develop technological processes for the creation, preparation and long-term stabilization of supplements based on maple by-products; Objective 3. To evaluate the digestibility and stability in the gastrointestinal tract of these supplements and their effects on the colonic microbiota; Objective 4. To investigate the impact of supplements on zootechnical performance in post-weaning pigs; Objective 5. Conduct a technico-economic study to validate the potential use of supplements for animal nutrition.
