The consumption of the staple food in modern Japan : Expansion of the foreign and domestic supply areas of rice and the wheat.

本研究的目的是研究现代日本（19世纪90年代至1930年代）的主食消费。特别是研究消费结构的变化、国内生产地区的变化趋势以及通过贸易从国外获得的供给。这一时期，稻米检验在国内各产区广泛开展，并展开了激烈的竞争。随着大米价格的上涨，面包和面条的小麦消费量也增加了。小麦消费量的增加促进了日本通过三井物产等日本企业从北美和澳大利亚进口小麦，有限公司或三菱公司。

The purpose of this research is to study the consumption of the staple food in modern Japan (1890's to 1930's). Especially to study the change of the consuming structure, the trends of the domestic production areas, and the supply from the foreign countries through the trade. In this period, the rice inspection spread in domestic production areas, and they competed with each other keenly. As the price of rice rose, consumption of the wheat for breads as well as noodles increased. The increase of the wheat consumption promoted wheat import from North America and Australia though the Japanese-business firms such as Mitsui & Co., Ltd.or Mitsubishi Corporation.
