本研究では, 薬食同源の視点から薬効が伝承されている天然薬物の中から香辛料食品に焦点を絞り, 新規機能性成分の開拓を行った. この研究過程で, 特にローズヒップ(Rosa canina)やナガコショウ(Piper chaba, 果実)の含有成分に強い抗肥満作用・抗糖尿病を有することを見いだすともに, 活性発現のための必須構造および作用機序の一部を明らかにした. また, 種々の香辛料食品から新規機能性成分を見いだした.
