Food product development and commercialization support for artisan retailer and manufacturer MacRL Group

It is the objective of Holland College and Canada's Smartest Kitchen (CSK) to work collaboratively with MacRL Group Ltd. (MacRL) to support food product development and commercialization for artisan food products that have a local appeal to the Prince Edward Island market and potential for appeal to the larger artisan market in Canada and Internationally. Sensory, shelf life, packaging, scale up and ingredient sourcing support are areas in which the proposed project will provide needed support to MacRL. With a focus on the tourism market and local ingredients, unique challenges around timing and variety of potatoes and sourcing of adequate volumes of product will be addressed. It is anticipated that eight new products will be launched and over 100 students will be involved in the project.
