Demand for low and no alcoholic beverages is rising globally amongst those who are more socially conscious of the dangers of drinking and driving, dietary preferences, and health concerns of alcohol. To meet this demand Fenelon Falls Brewing Co. is collaborating with Durham College to develop a recipe of a refreshing tasting seltzer using standard craft equipment and processes, which has low alcoholic as well as up to 5%ABV alcoholic content using standard craft brewing equipment and commonly available ingredients. By seeking analysis of the final product, Fenelon Falls Brewing Company hopes to understand the origins of specific taste markers and expand knowledge of approachability of non-beer related beverages. This project will equip the company with increased competitive advantage resulting in, increased market share through alternative product selection and access to a new market.
