项目摘要

平成26年度の大部分の月日は、本研究の総まとめを行うべく、平成24年9月に京都大学に提出した博士論文に大幅な加筆・修正することに費やされた。その結果、研究課題題目通り、フランス革命直後における「美食」言説について、19世紀初頭の美食家・文人であるグリモ・ド・ラ・レニエールという人物を中心に主に思想史的観点から検討し、これまで積み重ねてきた考察を一冊の著作『美食家の誕生 : グリモと〈食〉のフランス革命』(名古屋大学出版会)にまとめ、出版することができた。本書に関しては、日本経済新聞および他の複数の雑誌・新聞で書評や紹介文が掲載されるなど、世間からの反響も大きい。さらに本研究の成果を日本国内にとどまらず、世界に向けて発信すべく、3月には3週間弱にわたってフランスへ出張した。フランスではまず、3月14日にパリでの国際学会(「食べる世界遺産Patrimoine en bouche」)に参加し、18世紀末から19世紀フランスにおける「芸術=技術」としての料理という概念の成立に関して、フランス語での発表を行った。また3月21日にはトゥール大学食の歴史・文化研究所准教授フロラン・ケリエ氏の大学院生対象のゼミに参加し、ここで上記の著作に関する発表を行った。いずれの発表も、まずは日本におけるフランス研究の多様化を示すきっかけになったこと、さらには今後の研究の深化にとって貴重な議論が持てた点において相当程度の学術的意義に富んだものとなった。
